Growing 18 to 24 inches, French Tarragon resembles a leafy grass, almost, growing without obvious flowers and spreading with shiny long, thin, soft leaves, the stalks drooping a bit as it grows. Not the flashiest of garden herbs, it is an absolute star in the kitchen and is a necessary ingredient in many classic sauces and soups from French cuisine. Preferring well draining soil, we recommend a hanging basket or pot for this delicious friend. With a sweet slightly anise flavor, we recommend mixing into chicken salad, eggs, or looking up the exquisite clear French tarragon soup, and at the end of the day the raw leaves are so delicious they’re excellent to sprinkle atop served dishes as though they were scallions.
